The freshly collected palm sap is filtered and heated in large traditional vessels. It is slowly boiled to reduce its moisture content and concentrate its natural sweetness.
3. Natural Thickening
As the sap continues to boil, it gradually thickens into a rich, golden-brown syrup, developing the characteristic flavour and aroma of traditional palm jaggery.
4. Moulding and Setting
The concentrated mixture is poured into moulds and allowed to cool and solidify into traditional palm jaggery cakes.
5. Quality Checking and Packing
The finished palm jaggery is checked for quality and carefully packed to help preserve its taste and freshness until it reaches your home.
